It's good but not as good as salmon. It's a good way I found out to get rid of alot of last years stuff before we start fishing again. The big 100 pounders aren't real good eating unless ya deep fry them. The flakes are way too thick. I'm sold on my Pitt Boss pellet grille, never to much to worry about.....
I took 4 goose breasts and am curing them now for 7-10 days in a brine and planning on smoking them this weekend, a guy gave me a recipe for goose breast Pastrami........he claims it's very good, we shell see......
