We call an adult Male turkey a Tom because Benny Franklin didn't like Thomas Jefferson....and despite being a proponent of the Turkey being the national bird, which he was right....makes way more sense than the bald eagle.....

Anyways, he coined calling an adult Male Turkey a "Tom" as a dis to Tommy Jefferson.
