I've been using oak for a nutty rich wood instead of pecan and hickory, and maple when wanting a wood that's lighter and sweeter instead of apple. Both readily available, and offer a flavor that's pretty similar, in my opinion. I also like using bigger chunks. So when splitting firewood and stacking for drying....I got all kinds of nice big chunks that are already a little wet and good for smoking as is.
